Artist Stefani Bardin, TEDxManhattan 2011 Fellow, shows us her latest project — using a “smartpill” to reveal how we digest differently processed foods.
Stefani produces videos and immersive, interactive installations that explores the influences of corporate culture and industrial food production. Her current project works with gastroenterologist Dr. Braden Kuo at Harvard University where they just completed the first ever clinical study to use the M2A™ and SmartPill devices that look at how the human body responds to processed versus whole foods. She is an Honorary Resident at Eyebeam Art +Technology Center in New York and teaches in the School of Art, Media and Technology at Parsons The New School for Design and in the Food Studies Program at The New School for Public Engagement.
“As early as 1960 aspartame was determined to be a dangerous chemical and the emerging research years later only served to affirm the true nature of this artificial sweetener. Over the years, aspartame has been found to create holes in brain tissue, adversely affect the brain and nerve development in the fetus, cause cancer, migraines, headaches, seizures, convulsions and even retinal damage. With this amount of negative findings, aspartame should have been removed from the market years ago!”

In the European Union, it is codified as E951. Aspartame is a methylester of the aspartic acid/phenylalaninedipeptide. It was first sold under the brand name NutraSweet; since 2009 it also has been sold under the brand name AminoSweet. It was first synthesized in 1965 and the patent expired in 1992.
